Smoked salmon
Ingredients
- Brioche buns
- Smoked salmon
- 6 eggs + 4 knobs of butter
- Creme fraiche
- Chives
- Fresh truffle (optional)
- Avocado and lime
- Truffle mayo or chipotle mayo
- Salt and pepper
- Light cheese (optional)
Method
- Toast brioche buns and prep avocado with lime.
- Cook eggs + butter: 1 min on heat, 30 sec off, repeat while stirring.
- Season near the end with salt, pepper, and truffle if using.
- Stir in creme fraiche and chopped chives.
- Assemble with mayo, avocado, scramble, smoked salmon, and optional cheese.
