Lemon Herb Salmon & Greens
25-30 min Light dinner 2 servings

Ingredients

  • 2 salmon fillets
  • Olive oil
  • Lemon zest + juice
  • Garlic, chopped parsley, dill
  • Salt and black pepper
  • Mixed greens or spinach

Method

  1. Mix olive oil, lemon, garlic, and herbs into a quick marinade.
  2. Season salmon and brush with marinade.
  3. Bake or pan-sear until just cooked through.
  4. Toss greens with remaining lemon-herb dressing.
  5. Serve salmon on greens and finish with fresh herbs.
